Cheese cut-out biscuits

Cheese cut-out biscuits

Something for Everyone
Ben Dearnley

These biscuits are totally delicious and if you have a food processor or Thermomix, they couldn’t be easier to make. Your child will love helping you with the cutting out. At Easter time, I make them with bunny cutters and use sultanas for eyes. They are also sophisticated enough to be perfect for a grown-up gathering as a nibble with a glass of wine.

Quantity Ingredient
175g plain flour
50g parmesan cheese, grated
50g cheddar cheese, grated
1/2 teaspoon paprika
125g butter, cubed
1 tablespoon water, cold
sesame seeds, (optional), for decorating
poppy seeds, (optional), for decorating

  1. Place the flour, cheeses and paprika in the bowl of a food processor and pulse for a few seconds until just combined. Add the butter and water and pulse until the mixture starts to ball around the blade. Turn the dough out onto a floured surface and knead very lightly. Divide the dough in half, form each half into a disc shape and wrap in plastic wrap. Refrigerate for 1 hour. (You can keep the dough in the refrigerator for up to 1 week before baking, or in the freezer for 2 months before thawing and baking.)
  2. When ready to bake, preheat the oven to 180ºC. Line two baking trays with baking paper. Roll the dough out to 5 mm thickness all over. Use a pastry cutter to cut out the biscuits, arranging on the prepared trays. Lightly re-roll and cut any leftovers.
  3. Sprinkle the sesame and poppy seeds over the biscuits, if liked. Bake in the oven for about 8 minutes, or until light golden and crisp.
  4. Remove from the oven and transfer to a wire rack to cool. The biscuits can be stored in an airtight container.

Baby’s serve

  • For a younger baby, wait until your baby is confident with finger foods (which may not happen until 8–9 months or older) before offering her one of these biscuits, broken up if needed. For an older baby, serve as is, broken up if needed.

Toddler’s serve

  • Serve as is.
