Ingredients

Quantity Ingredient
2 cups self-raising flour
3/4 cup brown sugar
1 cup buttermilk
1/4 cup vegetable oil
1 egg, lightly beaten
2 cups frozen blueberries

Method

  1. Preheat the oven to 190ºC. Line 12 x 1/3 cup muffin tins with paper cases.[
  2. Sift the flour into a large bowl then stir through the sugar. Make a well in the centre and add the buttermilk, oil and egg. Stir until just combined (do not overmix). Gently stir through the blueberries.
  3. Spoon the batter into the paper cases and bake for 25 minutes, or until a skewer inserted into the centres comes out clean. Set aside in the tin for 5 minutes, then transfer to a wire rack to cool. Serve warm or at room temperature.
