Ingredients

Quantity Ingredient
125g butter
3/4 cup caster sugar
1/2 teaspoon vanilla extract
2 eggs
2 large ripe bananas, mashed
1/2 cup walnuts, chopped, (optional)
1 1/2 cups self-raising flour
1/4 teaspoon bicarbonate of soda
1/3 cup milk

Lemon cream cheese icing

Quantity Ingredient
60g cream cheese
25g butter
1 teaspoon lemon rind, finely grated
3/4 cup icing sugar

Method

  1. Preheat the oven to 180ºC. Grease a deep, 20 cm round cake tin and line with baking paper.
  2. Using an electric mixer, cream the butter until soft, then beat in the sugar and vanilla until light and fluffy. Beat in the eggs, one at time. Stir through the banana and walnuts (if using), then sift in the flour and gently fold through. Dissolve the bicarbonate of soda in the milk and fold into the mixture. Spoon into the tin, spread evenly and bake for 50 minutes, or until a skewer inserted into the centre comes out clean. Set aside in the tin for 10 minutes before transferring to a wire rack to cool.
  3. To make the icing, beat the cream cheese, butter and rind in an electric mixer until light and fluffy. Gradually beat in the icing sugar. Spread over the top of the cooled cake and serve.
