Ingredients

Quantity Ingredient
1 egg
4 tablespoons brown sugar
1/2 teaspoon vanilla sugar
2 1/2 tablespoons sunflower oil
4 tablespoons organic carrots, grated
6 tablespoons plain flour
1/2 teaspoon baking powder
1 pinch cinnamon or french four-spice seasoning

Cream cheese topping

Quantity Ingredient
70g fresh cream cheese
1 slice butter, 1/2 cm thick
2 tablespoons icing sugar
1 teaspoon lemon zest

Method

  1. In a mug: Beat in one by one the egg, brown sugar, vanilla sugar, sunflower oil, grated carrots, flour, baking powder and four-spice seasoning or cinnamon.
  2. Cook in the microwave for 1 minute 40 seconds (800 watts).
  3. Decorate with a thin layer of cream cheese icing.
