Ingredients

Quantity Ingredient
1 slice butter, 1 cm thick
4 level tablespoons caster sugar
2 teaspoons lemon zest
1 egg
1/2 teaspoon vanilla sugar
4 teaspoons single cream
6 tablespoons plain flour
1/2 teaspoon baking powder

Icing and decoration

Quantity Ingredient
4 tablespoons icing sugar
1 teaspoon water
yellow food colouring
1 teaspoon lemon yellow sugar strands, (optional)

Method

  1. Melt the butter in a bowl in the microwave for 20 seconds (800 watts).
  2. In a mug: Beat in one by one the sugar, lemon zest, egg, vanilla sugar, cream, flour, baking powder and melted butter.
  3. Cook in the microwave for 1 minute 40 seconds (800 watts).
  4. Decorate with yellow icing and lemon yellow sugar strands.
