Apple, oat and raisin crumble

Ingredients

Quantity Ingredient
750g bramley apples
100g raisins
60-90g soft light brown sugar
1 lemon
10g butter, to grease

For the crumble

Quantity Ingredient
100g plain flour
1/2-1 teaspoon ground cinnamon
pinch salt
100g oats
125g butter
90g soft light brown sugar

Method

  1. Heat the oven to 200°C.
  2. Peel and core the apples and cut them into 2–3 cm chunks. Place in a bowl with the raisins and sugar (the amount depending on the sweetness of the apples). Finely grate the zest of half the lemon into the apple mixture, and stir it through.
  3. Use the butter to grease a shallow ovenproof dish, about 20 x 15 cm and 5 cm deep. Tip in the apple mixture.
  4. For the crumble, sift the flour, cinnamon and salt into a bowl and stir in the oats. Cut the butter into small chunks and rub it into the dry ingredients with your fingertips until the mixture resembles coarse breadcrumbs. Stir in the sugar and sprinkle the crumble over the fruit.
  5. Cook in the oven for 30–40 minutes, or until the apple is soft when prodded with a sharp knife and the crumble is lightly browned. Serve with custard.

Variation

  • Classic apple crumble: Omit the raisins and top the apple filling with the more classic crumble topping.
