This recipe harnesses the ultimate flavour combination of beetroot and coconut.

Arrowroot is pure starch often used in gluten-free cooking. It helps to thicken liquids at lower temperatures than cornflour (cornstarch), is not weakened by acidic ingredients, has a neutral taste, does not turn sauces cloudy and is not affected by freezing. Used here in home-made ice-cream the arrowroot helps prevent ice crystals from forming during the freezing process.

Ingredients

Quantity Ingredient
500ml coconut milk
2 tablespoons arrowroot
360ml beetroot juice
50g coconut sugar
2 tablespoons vanilla extract
1/2 teaspoon salt, to taste
toasted coconut chips, to decorate

Method

  1. In a small bowl, whisk together 250ml coconut milk and the arrowroot. Set aside.
  2. In a medium saucepan, heat the remaining coconut milk over a low heat. When heated to almost boiling, add the whisked coconut milk and arrowroot mixture and keep stirring until thickened, then remove from the heat.
  3. Now add the remaining ingredients to the saucepan and whisk until smooth. Leave to cool, then chill in the refrigerator.
  4. Once the mixture is cold, either place it into an ice-cream maker and churn until frozen or line a large loaf tin (pan) or glass baking dish with clingfilm (plastic wrap), making sure there is enough clingfilm hanging over the edges to cover the top as well. Pour the mixture into the lined container, cover and place in the freezer. When it is semi-solid (after 2–3 hours), whisk it again with a fork or spoon to break up the ice crystals and refreeze. Make sure the ice-cream is covered each time it goes into the freezer or ice crystals will form and create an ‘icy’ ice-cream instead of a smooth, creamy consistency. When frozen, place in a food processor or blender and process until smooth. Cover and refreeze until ready to serve.
  5. Serve in scoops, topped with toasted coconut chips.
