Yellow pepper dip with walnuts

Ingredients

Quantity Ingredient
2 yellow peppers, roasted, skinned and deseeded
handful walnuts, plus extra, chopped, to garnish
1 lemon or lime, juiced
2 garlic cloves, very finely chopped
1-2 tablespoons good sunflower or pumpkin seed oil, plus extra to garnish
tiny pinch saffron strands
1 tablespoon maldon sea salt

Method

  1. Blend the roasted peppers, walnuts, juice, garlic and oil in a food processor. Grind the saffron and sea salt with a pestle and mortar. Combine with the blended ingredients in a bowl and garnish with the walnuts and a drizzle of oil.
