This is a really fudgy, squidgy, rich recipe that works well with the Roasted Carrot Dip. Malt extract contains lots of iron and vitamins.

Ingredients

Quantity Ingredient
3 tablespoons malt extract
100ml golden syrup
100ml date syrup
130ml soya milk
130g dates, stoned, (about 18)
225g self-raising flour
pinch sea salt

Method

  1. Preheat the oven to 190°C. Grease and line a large (900 g) loaf tin.
  2. Warm the malt extract, golden syrup, date syrup and soya milk together in a large saucepan, then fold in the dates, flour and salt.
  3. Tip the mixture into the prepared loaf tin and bake for 40 minutes.
