These can be a snack or a topping for soups and salads. I’ve also tried this successfully with soya beans.

Ingredients

Quantity Ingredient
400g tin of chickpeas, drained and rinsed
2 tablespoons olive oil
1 tablespoon ground cumin
1 tablespoon ground coriander
1/2 tablespoon cayenne pepper
1 tablespoon sea salt

Method

  1. Preheat the oven to 160°C. Dry the chickpeas thoroughly using kitchen paper. Place on a baking sheet lined with a silicone baking mat, add the oil, spices and salt and thoroughly mix until evenly coated. Spread them in an even layer and bake for about 1 hour until crisp. Add more seasoning if you wish. Leave to cool, then store in a dry, airtight container for up to 2 weeks.
