Onigiri rice triangles

Have a bowl of warm water nearby when you’re assembling these to prevent the rice sticking to your hands.

Ingredients

Quantity Ingredient
Sushi rice, cooked and still warm
small squares or strips nori seaweed
sea salt

Suggested fillings:

Quantity Ingredient
umeboshi plums, stoned
or umeboshi paste
carrot or cucumber, shredded and mixed with a little soy sauce
japanese pickles, such as ginger or daikon radish

Method

  1. Wet your hands and put a little salt in the palm of your left hand. Grasp about ½ cup of rice and place it in the palm of the same hand. Make a small well in the centre, place your chosen filling in the well and cover with more rice. Gently but firmly shape into a pyramid, turning as you shape. Wrap with the nori, adding a dab of the filling to the outside for identification purposes. Wrap in clingfilm, if eating on the run!
