I make this very simply, the way Mexicans do. No garlic. NO GARLIC. Got it?

Ingredients

Quantity Ingredient
2 ripe hass avocados
1 jalapeno chilli, roasted, skinned and deseeded, then finely chopped
1 small red onion, finely diced
1 lime, juiced
1/2 teaspoon ground cumin
handful coriander, finely chopped
sea salt, such as fleur de sel or Maldon

Method

  1. Peel, halve and stone the avocados. Chop into cubes, then roughly mash with a fork to make a chunky paste. Don’t use a blender or food processor; you want it slightly rough, not whipped like a shop-bought guacamole. Stir in the chilli, onion, lime juice, cumin, 1 tablespoon salt and the coriander. Taste and season with salt.
