These little pick-me-ups are good to keep in your pocket or bag. Think: healthy chocolate truffles. Make the balls, then coat them in different powders of your choice, including edible glitter for party occasions or gifts.

Ingredients

Quantity Ingredient
10 medjool dates, stoned and finely chopped
10g crunchy peanut butter, or other nut butter, at room temperature
25g pecan nuts or other nuts, toasted and chopped
1 tablespoon carob molasses
3 tablespoons maple syrup
1 tablespoon vanilla paste
pinch sea salt

To coat:

carob/cocoa powder
vegan dark chocolate sprinkles
finely ground seeds, such as pale green pumpkin seeds
ground pistachio nuts
poppy seeds
spirulina powder
crushed pink peppercorns
beetroot powder
ginseng powder
edible glitter

Method

  1. Blend the dates, nut butter and pecans together in a food processor, then stir in the rest of the ingredients. Set out small saucers of, say, 3 rolling ingredients and shape small balls from the mixture, then roll them in one of the coatings, alternating so that you have a pretty selection.
