Of course, you can buy soya yoghurt in most places now, but if you want to try making your own, here is a recipe. You will need to buy a starter soya yoghurt, however.

Ingredients

Quantity Ingredient
1 litre soya milk, (sweetened or unsweetened)
pinch sea salt
10g agar agar
or 2 tablespoons ground linseed
125 g pot good-quality plain soya yoghurt
flavourings, if desired, such as fruit, berries and/or cinnamon

Method

  1. Shake the soya milk carton and pour it into a medium saucepan. Heat over a medium heat until lukewarm, then let it cool to between 40 and 50°C. Whisk in the salt and agar agar or ground linseed, to thicken.
  2. Then add the soya yoghurt, stir it in and leave it either in a covered pan in a warm place – an airing cupboard or a low oven – or in a yoghurt maker for 6–8 hours or overnight. Then place it in the fridge where it will thicken further. Stir in any flavourings, if desired.
  3. After each batch, keep back 100 ml of the old (unflavoured) yoghurt in the fridge to start your next batch.
