These can be made in half an hour, are very pretty and can be used in salads, sandwiches or burgers as a relish. I love them so much that I eat them out of the jar and have to make more.

Ingredients

Quantity Ingredient
150ml red wine vinegar
3 tablespoons sea salt
2 tablespoons caster sugar
250ml water
1 large red onion, finely sliced

Method

  1. Mix the vinegar, salt, sugar and water, stirring to dissolve the sugar and salt. Put the onion in a sterilised 500 ml jar, top with as much pickling liquid as will fit and leave for 30 minutes or so and it will turn a hot pink colour. Eat within 2 weeks.
