I used ‘sultana’ grapes from my local shop which stocks Turkish food, but you can use any seedless white/green grapes. I keep a jar of these in my larder and sling them on salads.

Ingredients

Quantity Ingredient
150ml white wine vinegar
2 tablespoons caster sugar
3 tablespoons coarse sea salt or sel gris
1 tablespoon mustard seeds
250ml water
250g seedless green grapes, stems removed

Method

  1. Mix the vinegar, sugar, salt, mustard seeds and water together in a medium saucepan and heat until the sugar has dissolved, then remove from the heat and let it cool. Put the grapes in a sterilised 500 ml jar and top with as much cool pickling liquid as will fit. These will keep for months.
