200g peanuts, raw or roasted
2 tablespoons cold-pressed oil
1/2-1 teaspoon sea salt

Method

  1. If you want to roast raw nuts (which brings out the oils), preheat your oven to 180ºC. Spread the nuts in a single layer on a baking tray and bake for 10 minutes or until lightly golden. Then continue with the rest of the recipe while the nuts are still warm.
  2. To make the raw and roasted nut butter, put the nuts in a high-speed blender or food processor. Pulse a couple of times in 30-second intervals, scraping down between pulses. Then add the oil and salt. Pulse again until smooth, unless you want chunky peanut butter. You can store this in a jar or plastic container in the fridge for at least a month.
