This is the vegan version of the Japanese stock that forms the basis of miso soup. Do not boil this stock.

Ingredients

Quantity Ingredient
8 cm square kombu
1 litre water

Method

  1. Put the kombu and water into a pan over a low heat. After approximately 10 minutes, small bubbles will form and the kombu will begin to float.
  2. Remove the kombu and bring the liquid just to the boil, then quickly take the pan off the heat and add ½ cup of cold water, to reduce the temperature.
  3. Strain through a sieve lined with kitchen paper or muslin, and use within 3 days.
