Ingredients

Quantity Ingredient
2 x 400 ml tins coconut milk
150g caster sugar
1 teaspoon vanilla paste

Method

  1. You want just the creamy part of the coconut milk, so turn the tin over, open it and scoop off the hard cream, leaving the water. In a stand mixer or using an electric whisk, mix the sugar and vanilla paste into the cream. Use to top any dessert, or as a side with pudding.
