Basic nut ‘cheez’

If you’ve had real dairy cheese any time recently, you’re going to find it hard to forget what it tastes like. And in that frame of mind, any nondairy substitute is going to be rather disappointing. On this basis, I must admit I was cynical about this, but it was delicious and I couldn’t stop eating it. It’s equivalent to a soft goats’ cheese or cream cheese.

Ingredients

Quantity Ingredient
100g macadamia nuts
100g cashew nuts
1 teaspoon sea salt
flavouring, such as herbs, spices or chilli

Method

  1. Soak all the nuts overnight, then drain off the excess water. Blend in a powerful blender, adding salt and any flavouring. Then transfer the mixture to a muslin-lined sieve set over a bowl, or a nut bag. Wrap the mixture with the muslin, press it down and leave weighted with a jar filled with water for 24 hours. Then serve! Great on crackers.
