This green seasoning became a favourite condiment of mine over the course of writing this book; it is equally good on toast, or with chips. Chadon beni can be bought in Chinese shops as ‘sawtooth’ or ‘long coriander’, and it has a very strong fresh coriander flavour.

Ingredients

Quantity Ingredient
3 whole garlic bulbs, roasted
bunch thyme, leaves only
bunch coriander, leaves only
handful basil, leaves only
bunch chives
3 sprigs oregano, leaves only
1 celery stick, roughly chopped
handful parsley, leaves only
2 green chillies, deseeded if you don’t want too much heat
5 spring onions, roughly chopped
1 green pepper, deseeded
bunch chadon beni, leaves only, (optional)
1 lemon, juiced
1 1/2 tablespoons sea salt, to taste

Method

  1. Put all the ingredients into a food processor and pulverise to a paste.
