Chia seed, rose & raspberry falooda

This is an Indian ‘sundae’ traditionally made with basil seeds, which expand and have a soft gelatinous texture with a nutty centre. A falooda can alternatively be made with vermicelli, which is something most Westerners are not too keen on – it’s like rice pudding, but with pasta. So I’ve eliminated the vermicelli. Chia seeds are a healthy update, for chia lowers cholesterol and adds fibre to the diet.

Ingredients

Quantity Ingredient
4 tablespoons chia seeds
400ml sweetened almond or rice milk,, chilled
4 tablespoons caster or coconut sugar
8 scoops vegan vanilla ice cream
400g raspberries
4 teaspoons rosewater
mint leaves, to garnish

Method

  1. Soak the chia seeds in the milk and sugar for at least 15 minutes.
  2. Divide the mixture between 4 tall glasses, then add a scoop of ice cream, a few raspberries, 1 teaspoon rosewater, another scoop of ice cream and more raspberries. Finally, top with a few mint leaves.
