Ingredients

Quantity Ingredient
2 tablespoons olive oil
3 red onions, halved and thinly sliced
2 teaspoons balsamic vinegar
1 teaspoon brown or caster sugar
1 teaspoon picked thyme leaves, optional
1/2 teaspoon sea salt

Method

  1. Heat the oil in a medium saucepan over a medium–low heat. Sauté the onion for 5 minutes, until softened but not browned. Cover the pan with the lid, reduce the heat to low and continue to cook for about 20 minutes, stirring occasionally. Add the vinegar, sugar, thyme (if using) and salt and cook for a further 10 minutes, uncovered, until the onions caramelise. Serve warm or cold. The relish will last about 1 week in the refrigerator and is delicious in sandwiches or as an accompaniment to cold meats.
