Cheat’s strawberry balsamic jam

When you don’t have the time to make a special homemade jam – cheat. Adding a couple of extra ingredients to shop-bought strawberry jam will transform it (and no one will know you didn’t spend hours stirring a hot pan). A touch of balsamic vinegar enhances the flavour of sweet strawberries and lends a lovely rich colour to the jam. Serve generously on Traditional sultana scones.

Ingredients

Quantity Ingredient
200g fresh strawberries, hulled and halved
5 tablespoons strawberry jam
1 tablespoon balsamic vinegar

Method

  1. Put all the ingredients into a large saucepan and cook over a low-medium heat for 10 minutes, stirring occasionally until the fresh strawberries have cooked down and the ingredients have combined.
  2. Serve warm or allow to cool before storing in a sterilized airtight jar for up to two weeks.
