This recipe came about by accident when I bought a bag full of pears from my local market, went home to poach them, and realized I had no red wine. To match the tannin taste of red wine, I substituted the alcohol for black tea and all the spices I had in the cupboard. The pears soak up the sweet, hearty spices and are a perfect last-minute dessert that looks and tastes impressive.

Ingredients

Quantity Ingredient
1 litre black tea
3 tablespoons caster sugar
4 star anise
6 cardamom pods
2 cinnamon sticks
2 cloves
1 teaspoon grated nutmeg
1 teaspoon ground mixed spice
1 teaspoon vanilla paste
4 ripe conference pears

Method

  1. Pour the black tea into a large pan and add the sugar, star anise, cardamom pods, cinnamon sticks, cloves, nutmeg, mixed spice, and vanilla paste. Bring to the boil over a high heat.
  2. In the meantime, cut the base of the pears so that they can sit flat and peel away the skin. Use tongs to gently place each pair into the pan.
  3. Reduce the heat slightly and allow to cook for 10–12 minutes until the pears are soft. Serve immediately with a generous spoonful of the fragrant syrup from the pan.
