This slaw has the right balance of sweet and sharp, making it the perfect accompaniment to just about anything.

Ingredients

Quantity Ingredient
300g red cabbage, coarsely shredded
2 granny smith apples, grated
3 spring onions, finely chopped
1 tablespoon apple juice
2 teaspoons apple cider vinegar
1 teaspoon dijon mustard

Method

  1. Place the cabbage in a large bowl.
  2. Combine the apples and spring onions with the cabbage.
  3. Spoon in the apple juice, apple cider vinegar, and mustard, then stir through to combine.
