When you’re in a hurry, mashed potato is out of the question. However, if you simply swap potato for cauliflower, and blitz it with some creamy ingredients, you can soon enjoy that comforting taste in under 15 minutes. You will find non-dairy cream cheese in many large supermarkets, with many stocking more than one brand.

Ingredients

Quantity Ingredient
1 cauliflower
1/2 tablespoon fresh dill, finely chopped
3 tablespoons non-dairy cream cheese
pinch sea salt
pinch black pepper

Method

  1. Bring a pan of water to the boil while you remove the stem of the cauliflower. Add the florets to the water and boil for 10 minutes until completely softened.
  2. Thoroughly drain the water and add the dill and cream cheese to the pan. Mash the cauliflower until smooth and creamy, then season with salt and black pepper.
