Zesty orange and lemon waffles

I’m often told that many of my recipes have an American influence. When I started out as vegan in 2006, many of my resources and recipes were from the US. I loved so many of the ingredients and I still use them over ten years later. These hot orange and lemon breakfast waffles hold a special place in my heart – is there any wonder why I love so many American breakfasts?

Ingredients

Quantity Ingredient
250g self-raising flour
1 teaspoon baking powder
1 tablespoon granulated sugar
300ml soya milk
70ml orange juice
70ml sunflower oil
1 teaspoon vanilla extract
1 unwaxed lemon, juiced

Method

  1. Heat your waffle maker according to its instructions.
  2. In a large bowl, mix together the flour, baking powder and sugar.
  3. Pour in the soya milk, orange juice, oil, and vanilla extract and mix until just combined.
  4. Pour the batter into the waffle maker and cook for 8–10 minutes. While the waffles are cooking, grate the zest of the lemon and squeeze out the juice, reserving for when the waffles are cooked.
  5. Carefully remove the waffles from the machine. Drizzle with the lemon juice and scatter over the lemon zest. Serve immediately.
