Smashed avocado, parsley, and tomato bagels

If you love avocado on toast, these bagels offer a flavoursome twist. Cool, smashed avocado meets zingy lime, fresh parsley, and sweet tomatoes, loaded onto a hot, crisp-soft bagel.

Ingredients

Quantity Ingredient
2 savoury bagels
2 ripe avocados
handful fresh flat-leaf parsley, roughly chopped
3 cherry tomatoes, roughly chopped
1 unwaxed lime, juiced
generous pinch sea salt

Method

  1. Slice the bagels in half and toast until golden.
  2. In the meantime, make the topping. Remove the stones from the avocados and scoop the flesh into a bowl. Mash with a fork until some parts are smooth and some bits are still chunky. Stir the parsley and tomatoes into the avocado. Stir in the lime juice and sprinkle with sea salt.
  3. Spoon the topping over the hot bagels and serve immediately.
