Griddled grapefruit with maple syrup and pecans

Pink grapefruits are juicy, sweet, and refreshing – perfect for breakfast with maple syrup and crunchy pecan nuts.

Ingredients

Quantity Ingredient
2 pink grapefruits
4 tablespoons maple syrup
4 tablespoons maple syrup, for drizzling
1/2 teaspoon ground cinnamon
handful crushed pecans

Method

  1. Heat a griddle pan over a medium-high heat while you prepare the grapefruits.
  2. Peel the grapefruits and cut them into 1cm slices. Remove any visible seeds.
  3. Pour the maple syrup and cinnamon into a bowl and mix together. Dip each grapefruit slice in the syrup, then use tongs to place on the griddle pan.
  4. Cook for 30 seconds, then turn to cook the other side.
  5. Transfer onto plates and drizzle with the extra maple syrup. Scatter over the pecans and enjoy hot.
