A soffritto is a mixture of finely chopped vegetables that are fried slowly in extra-virgin olive oil to give a wonderful base flavour to soups, ragu and stews. Sometimes garlic and herbs such as rosemary, bay and thyme are added.

Method

  1. Make soffritto with 2 celery stalks, 1 large white onion and 2 medium carrots. Peel and finely chop the vegetables by hand or in a food processor and the soffritto is ready to use.
