Beautiful and simple, this has become my standby dessert recipe as long as I can find fresh figs. Something magical happens to figs when you cook them, especially when they take a warm bath of Madeira, a sweet wine from the islands of Madeira. Serve them warm with vanilla or almond ice cream.

Ingredients

Quantity Ingredient
8 fresh figs
200ml madeira
200ml water

Method

  1. Preheat the oven to 180°C. Put the figs into a small deep baking dish and pour over the Madeira and water. Cover with foil and bake in the oven for 45 minutes removing the foil halfway through. Remove from the oven and allow to cool. To make a syrup from the juices pour them into a small saucepan and reduce over a medium heat until half of the original volume and slightly thickened. Serve at room temperature with vanilla or almond ice cream and the syrup poured over the top.
