At the famous bacaro Cantinone già Schiavi the cicchetti are so popular that Alessandra de Respinis, the owner, has written a little book of her favourite combinations entitled Cicchettario. Our favourite fillings here were creamy tuna mayonnaise made with brandy and topped with strips of leeks; grilled aubergine with stracchino cheese; walnut and Parmesan pesto on ricotta with redcurrants; and chestnut pesto, robiola chesse and courgette. She also uses hard-boiled eggs as vessels for her delicious concoctions.

Ingredients

6 crostini, (see method)
6 generous tablespoons ricotta
handful redcurrants

For the pesto

Quantity Ingredient
30g walnuts
30g parmesan, finely grated
1/4 garlic clove
extra-virgin olive oil
salt
freshly ground black pepper

Method

  1. To make crostini: Choose a small sourdough loaf or a French baguette and cut into slices around 2 cm thick. Bake at 200°C on a rack in an oven for a few minutes until just golden. Remove from the oven and allow to cool on the rack. Then spread with your favourite topping and serve. Don’t make them too far in advance or they will become soggy. Alternatively, use cooled, firm polenta and toast or fry squares of it before adding your topping. These polenta squares are frequently topped with Baccalà Mantecato, a creamy mousse made from salted dried cod.
  2. To make the pesto, blend together in a food processor the walnuts, Parmesan, garlic and enough oil to make the mixture runny; do not over-blend as it should still have a slightly rough texture. Season to taste. Spread a generous tablespoon of ricotta over each crostini and drizzle over the pesto. Top with redcurrants.
