A plate of just-fried, crisply coated fish so fresh you can still taste the sea water in them, a glass of chilled cloudy Prosecco and a view of the Grand Canal – dining doesn’t get much better. Actually my view is currently a postcard of the Grand Canal opposite my desk but the dish is the same. Anchovies, little sardines or sprats are perfect for this, but they must be fresh. In fact, so fresh that they should be straight from the boat or market stall and preferably still in rigor. This dish was cooked for me by our friend and cook Arianna Patron and she called it scotto ditto, meaning ‘hot fingers’, as the fish smells so good you can’t wait to eat them and so burn your fingers! Arianna used only flour and told me not to use lemon on the fishes as they just don’t need it; she was right.

Ingredients

seed oil, for deep-frying
plate ‘00’ flour, to coat the fish
fine sea salt, to serve
any amount fresh sardines
or any amount other fresh small oily fish

Method

  1. Keep the fish ice cold (but not to the point where they freeze) for as long as possible before frying. Remove the heads and spines from the fish but leave the tails intact and wash gently. Drain on paper towels. Heat the oil in a large high-sided frying pan or deep-fat fryer to around 175°C or hot enough to make a small piece of bread sizzle when it hits the fat. Dip the fish in the flour and gently tap off the excess. Fry in the hot oil for just 1–2 minutes until cooked through. Drain on paper towels and dust with the salt. Pour a glass of Prosecco and eat the fish while hot.
