Quick canned cherry tomato sauce

Canned cherry tomatoes are brilliant for making a simple sauce. Not only are they full of flavour, they’re also peeled and as they’re so small they cook really quickly.

Ingredients

Quantity Ingredient
50ml olive oil
2 garlic cloves, finely chopped
1 teaspoon salt
good pinch freshly ground black pepper
2 x 400g canned cherry tomatoes
1 large sprig basil
2 teaspoons caster sugar
550g long or short pasta, to serve

Method

  1. Heat the oil in a frying pan and fry the garlic briefly with the salt and black pepper. When just so add the tomatoes, basil and sugar. Break the tomatoes up a little with a wooden spoon and cook for 15–20 minutes over a medium heat. Taste and adjust the seasoning if necessary before mixing in with your pasta.
