A perfect duvet-day treat – serve with crusty bread.

Ingredients

Quantity Ingredient
1 mug vegetable juice (like v8)
or tinned tomato soup
40g tinned borlotti beans
60g frozen vegetables
15-20g vermicelli noodles
fresh parsley, to serve (optional)
1/2 tablespoon parmesan shavings, to serve (optional)
pinch chilli flakes, to serve (optional)
pesto, to serve (optional)

Method

  1. Pour the juice or soup into a mug and add the borlotti beans, vegetables and noodles, then heat in the microwave on high for 2–3 minutes. Alternatively, bring the mixture to the boil in a saucepan on the hob. You want to heat it up enough to cook the noodles and frozen veg thoroughly – this takes around 4 minutes.
  2. Serve topped with the parsley, Parmesan, chilli flakes and pesto, if using.
