This is a quick and fresher version of the classic recipe.

Ingredients

Quantity Ingredient
1 teaspoon salt
1/2 chinese cabbage, torn
2 garlic cloves, finely chopped
1 teaspoon caster sugar
1 tablespoon chilli powder
3 tablespoons fish sauce
4 spring onions, cut into 3 cm lengths
1 tablespoon sesame oil
pinch mixed sesame seeds

Method

  1. Scatter the salt over the cabbage leaves and set aside in a large bowl for 5 minutes. In a small bowl, combine the garlic, sugar, chilli powder and fish sauce to form a paste.
  2. Add the spring onions, sesame oil and seeds, and chilli paste to the cabbage. Using your hands, rub the chilli paste into the other ingredients until well combined. Store in an airtight container. It will keep refrigerated for 1 week.
