This recipe is a take on the Jewish baked pudding, which uses noodles in a sweet setting.

Ingredients

Quantity Ingredient
180g medium egg noodles, cooked according to the packet instructions and cooled
60g raisins
60g flaked almonds
4 medium eggs, whisked
120g sour cream
250g cottage cheese
100g cream cheese
100g caster sugar, plus a little extra for dusting
60g butter, melted
cinnamon, for dusting
icing sugar, for dusting

Method

  1. Preheat the oven to 180°C. Line a 12-hole muffin tin with muffin cases.
  2. Place the raisins, flaked almonds and noodles in a bowl. Add the eggs, sour cream, cottage cheese, cream cheese, sugar and butter. Mix well and pour evenly between the muffin cases. Top with a sprinkle of cinnamon and icing sugar, then bake for 40 minutes until set and golden. Check after 20 minutes – if they look like they are golden enough, reduce the oven temperature to 160°C for the next 20 mins. Once cooled, keep in the fridge for up to 1 week.
