How to pimp in style. Zingy, limey noodles with prawns and scrambled eggs – all in one bowl.

Ingredients

Quantity Ingredient
200g flat rice noodles, cooked according to the packet instructions
2 limes, juiced
1 tablespoon sriracha
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon ginger paste
1 tablespoon vegetable oil
250g raw tiger prawns
2 medium eggs
2 spring onions, sliced diagonally
1 long red chilli, deseeded and halved lengthways, optional

Method

  1. In a bowl, mix the juice of 1 lime, the Sriracha, soy sauce, honey and ginger, and set aside. In a frying pan over a high heat, fry the prawns with the oil and 1 tablespoon of the Sriracha mixture until cooked. Set aside.
  2. Crack the eggs into a small bowl and whisk with a fork. Pour the egg into the pan and stir it well. Use a spatula to move the egg around quickly so it cooks in a scrambled style. After 2 minutes, or when the egg is cooked, take the pan off the heat. Add the remaining Sriracha mixture, the noodles and prawns. Squeeze over the other lime and serve with the spring onions scattered over the top and red chilli, if using.
