This is the perfect marriage of fresh ingredients, spices and full-on flavour – nourishing and delicious. Bibimbap is a Korean dish meaning ‘mixed rice’ – but it’s just as delicious with noodles!

Ingredients

Quantity Ingredient
100g black rice noodles, cooked according to the packet instructions
2 see method for ingredients
5 cm piece ginger, peeled and finely grated
1 garlic clove, finely chopped
2 tablespoons soy sauce
100g firm tofu, cut into 1 cm slices
1 tablespoon sesame seeds
2 tablespoons vegetable oil
200g green beans, trimmed, halved
100g mushrooms, sliced
1 large carrot, cut into thin matchsticks
salt
freshly ground black pepper
50g red cabbage, finely shredded
2 spring onions, thinly sliced diagonally

Dressing:

Quantity Ingredient
2 tablespoons white wine vinegar
3 teaspoons sambal oelek or hot chilli sauce
pinch caster sugar
1 teaspoon sesame oil

Method

  1. Combine the ginger, garlic and soy sauce in a bowl. Add the tofu and stir until well coated in the marinade, then set aside for 10 minutes.
  2. Place the sesame seeds on a plate. Transfer the tofu to a separate plate, reserving the marinade. Press one side of the tofu slices into the sesame seeds to coat them. Return the tofu to the plate.
  3. Heat 1 tablespoon oil in a 20 cm frying pan over a high heat. Add the beans, mushrooms and carrot, and stir-fry, making sure that the vegetables are semi-charred. Season with salt and pepper, then set aside.
  4. Heat the remaining oil in a 20 cm pan. Add the tofu, sesame-side down. Cook for 2 minutes or until the seeds are golden. Turn and cook for a further 2–3 minutes or until heated through.
  5. To make the dressing, whisk the ingredients together with 2 teaspoons water in a small jug.
  6. Arrange the noodles, stir-fried vegetables, tofu, cabbage and spring onions in 2 serving bowls. Season with salt and black pepper. Top with the fried eggs. Drizzle with the dressing and serve with the reserved tofu marinade.
