The combination of curry powder and noodles transports me to the streets of Singapore.

Ingredients

Quantity Ingredient
1 pack instant noodles, cooked according to the packet instructions
1 tablespoon rapeseed oil
1 teaspoon curry powder
100g frozen vegetables
2 spring onions, chopped
a drizzle soy sauce
hot chilli sauce, (optional)

Method

  1. Heat the oil in a large 20 cm frying pan over a medium heat. Add the curry powder and cook for 30 seconds. Then add the frozen vegetables and spring onions, and cook for 2–3 minutes. Add the vegetable mixture to the cooked noodles and toss to combine. Add the soy sauce and chilli sauce, if using.
