This cheat is a great way to recreate the flavours that usually take hours to develop in a broth.

Ingredients

Quantity Ingredient
200g flat noodles, cooked according to the packet instructions
500ml beef stock
2 thick slices ginger, peeled
1 onion, thinly sliced
2 garlic cloves, sliced
3 star anise
1 cinnamon stick, lightly bruised
1 tablespoon caster sugar
2 tablespoons fish sauce
200g beef steak such as sirloin, thinly sliced
20g beansprouts
1 long red chilli, deseeded and thinly sliced, to serve
1/2 bunch coriander, leaves picked, to serve
lime wedges, to serve

Method

  1. Add the stock to a saucepan along with the ginger, onion, garlic, star anise, cinnamon, sugar and fish sauce. Bring to the boil, then reduce the heat to low. Cover and simmer for 20 minutes. Strain, then return the soup to the pan. Cover and return to the boil.
  2. Divide the noodles among warmed soup bowls, then top with the sliced beef steak. Pour over the hot soup mixture (the heat will gently cook the meat) and top with the beansprouts. Serve garnished with chilli, coriander and lime wedges.
