Miso & tofu udon noodles

Soothing and nutritious – a perfect warming meal.

Ingredients

Quantity Ingredient
200g udon noodles, cooked according to the packet instructions
4 tablespoons white miso paste
2 handfuls baby spinach
200g tofu, cubed
100g button mushrooms, sliced

Method

  1. Combine the miso and 500 ml cold water in a large saucepan over a medium-high heat. Cook, stirring, for 2 minutes or until the paste has dissolved. Cover. Gently simmer so as not to kill any of the goodness of the miso paste.
  2. Add the spinach leaves, tofu and mushrooms to the miso mixture. Cook for 2 minutes or until the leaves have just wilted. Divide the noodles between the bowls. Ladle over the miso mixture. Serve.
