A perfect, quick, wholesome salad that keeps well. Make a batch ahead for packed lunches.

Ingredients

Quantity Ingredient
150g dried soba noodles, cooked according to the packet instructions
120g tinned tuna in olive oil, drained weight
100g tomatoes, halved
1 medium avocado, chopped
big handful mixed herbs, chopped
1/2 lemon, juiced
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
1/2 tablespoon honey
1 tablespoon mixed sesame seeds
salt
freshly ground black pepper
2 spring onions, sliced, to serve

Method

  1. Drain the tuna, reserving 2 tablespoons oil. Place the tuna in a large bowl, then flake with a fork. Add the noodles, tomatoes, avocado and herbs.
  2. Place the reserved oil, lemon juice, rice wine vinegar, soy sauce, honey and sesame seeds in a jug and mix well. Season with salt and pepper. Add to the mixture, toss to combine and serve topped with the spring onions.
