This is a take on the Thai green papaya salad. The ripe papaya adds a buttery, sweet and musky element – perfect with the duck and sharp dressing.

Ingredients

Quantity Ingredient
100g soba noodles, cooked according to the packet instructions
100g smoked duck, sliced
100g green beans, blanched
1/2 ripe papaya, scooped
100g cherry tomatoes, quartered
1-2 small red chillies, deseeded and finely chopped, (depending how hot you like it)
handful mint leaves, torn
handful coriander leaves, torn
handful thai basil leaves, torn

Quick Thai dressing:

Quantity Ingredient
1/2 tablespoon fish sauce
1 tablespoon sweet chilli sauce
1 tablespoon lime juice

Method

  1. To make the quick Thai dressing, mix all the ingredients together in a small bowl.
  2. In a large bowl, mix the noodles, duck, green beans, papaya, cherry tomatoes, chillies, mint leaves, coriander and Thai basil.
  3. Top with the quick Thai dressing and serve in bowls.
