Nut milks are extremely cost-efficient and delicious to make at home. They have a very creamy and beautiful taste and it’s incredibly satisfying to make such a basic thing yourself. Here is my very basic nut milk recipe, along with a few of my favourite combinations.

Ingredients

Quantity Ingredient

Basic nut milk

Quantity Ingredient
140g nuts of choice, soaked overnight in water
1 litre filtered water

Chocolate hazelnut milk

Quantity Ingredient
1 litre basic nut milk, made with hazelnuts
2 tablespoons cacao
1/4 teaspoon sea salt
1-2 tablespoons stevia
1/2 tablespoon coconut oil

Almond espresso milk

Quantity Ingredient
1 litre basic nut milk, made with almonds
1-2 shots espresso
or 125ml cold brew coffee
2 medjool dates, pitted
1/4 teaspoon sea salt
1/2 tablespoon coconut oil

Coconut cashew milk

Quantity Ingredient
1 litre basic nut milk, made with cashews
1/4 teaspoon sea salt
125ml coconut milk
1 tablespoon stevia
1/2 tablespoon coconut oil

Method

  1. To make the basic nut milk, place the nuts and filtered water in a blender. Blitz for up to 2–3 minutes.
  2. Strain through a nut bag into a bottle or bowl, and keep stored in the refrigerator.
  3. For the other nut milks, simply blitz all the ingredients in a blender and pour into a bottle to keep in the refrigerator for 2–3 days.

Note:

  • Nut bags are available from health food stores and some greengrocers.
