For a large part of my life a wooden spoon has been my weapon of choice. They didn’t used to call me Betty Crocker in high school for nothing! I used any excuse I could to bake. I would practically bake sweets for the opening of an envelope. I would whip up brownies, cookies, cakes and slices for everyone to enjoy. Sugar and butter were my best friends. Desserts were so comforting and I found them easy, and people always seemed to admire and love them.
Then at the end of 2012 I realised I needed to change my sugar and butter ways. I let them both go and picked up the stevia and coconut oil instead. Suddenly my world was tipped upside down. I couldn’t make a lot of my favourites and, for a while, I honestly thought I had to give up sweets and baking, which didn’t make for a very happy Kate! Then I decided to take the challenge and kicked myself into gear. Why shouldn’t I be able to have healthy versions of all my favourite desserts?
Here is a collection of some of those favourites. From ice creams and crumble to cakes and puddings, this section covers many of the basics.
