Chia pudding is extremely easy to put together the night before, so there’s no excuse not to have a nourishing and energising breakfast. This is a really simple and delicious dish that you can take on the go or relax and eat at home.

Chia pudding

Ingredients

Quantity Ingredient
30g chia seeds
250ml coconut milk
1 tablespoon rice malt syrup
or 1 tablespoon raw honey
1/2 teaspoon vanilla extract
1/4 teaspoon ground cardamom
1/4 teaspoon sea salt

To serve

Quantity Ingredient
1/4 pomegranate, seeds scraped
1 tablespoon pistachio nuts

Method

  1. Combine all the chia pudding ingredients in a bowl, glass or jar. Cover and place the bowl in the refrigerator to set overnight.
  2. In the morning, sprinkle with the pomegranate seeds and pistachio nuts and enjoy! Eat immediately or store in the refrigerator for up to 24 hours.
