Here’s a tribute to Australia’s and New Zealand’s ANZAC soldiers, and the biscuit of the same name that we all go so nuts for, Downunder. These are perfect for both lunchboxes and for keeping the cookie monster inside you at bay – at any time of the day (or night).

Ingredients

Quantity Ingredient
2 tablespoons coconut oil
80g roasted or activated cashews
110g pistachios, crushed
50g gluten-free rolled oats
or rolled buckwheat
or quinoa flakes
2 1/2 tablespoons peanut butter
90g desiccated coconut
90g maple syrup
3 teaspoons raw honey

Method

  1. Place all the ingredients in your food processor or blender and process until everything is finely chopped and combined.
  2. Take about a tablespoon of the mixture at a time and roll it into 2.5 cm balls. Place them in an airtight container then refrigerate or freeze. These will keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
