INDIAN CAULIFLOWER ‘RICE’ PATTIES

These patties are amazing, with their subtle coconut and curry flavours. They can be eaten straight away, or kept in the fridge and used as an anytime snack.

Ingredients

Quantity Ingredient
300g cauliflower, chopped, about 1/2 a small cauliflower
2 1/2 tablespoons coconut oil
1 onion, finely chopped
3-4 teaspoons curry powder
1 garlic clove, crushed
1 1/2 teaspoons finely grated fresh ginger
1 green chilli, seeds removed, finely chopped, optional
50g poppy seeds
200g cabbage, finely chopped
45g desiccated coconut
250ml coconut cream
65g shelled baby peas
70g coconut flour
2 1/2 tablespoons linseed meal
sea salt and freshly ground black pepper, to taste

Method

  1. Place the cauliflower in your food processor then, using the pulse button, pulse until it’s finely chopped and resembles rice. Set aside.
  2. Heat 1 tablespoon of the coconut oil in a large frying pan over medium heat. Add the onion, curry powder, garlic, ginger and chilli. Cook, stirring often, for 3 minutes or until the onion has softened. Add the poppy seeds and cook for a further 1–2 minutes, or until the onion is translucent and the poppy seeds begin to ‘pop’.
  3. Add 60 ml water, the cabbage, desiccated coconut, coconut cream and cauliflower and cook, uncovered, for 5 minutes or until the vegetables have softened.
  4. Transfer to a mixing bowl then stir in the remaining ingredients, except the remaining oil. Take about 75 g of the mixture at a time and form into patties about 7 cm across.
  5. In a clean frying pan, heat the remaining oil over medium heat. Add the patties, in batches if necessary, and cook for 3–4 minutes on each side, or until golden. Serve them straight away or let them cool and store in an airtight container in the fridge for little savoury snacks.

NOTE

  • Currants and slivered almonds can be added to this recipe for even more texture and flavour!
